Trader Joe’s recently came out with a vegan brioche bread, so naturally I had to make this easy vegan french toast! This vegan french toast is sweet, buttery, and so simple to make.
I used to think of french toast as an elaborate meal that uses lots of ingredients, but it’s actually super simple and quick to make! Whip this up for yourself on a cozy weekend morning, or to serve at brunch and show everyone you don’t need eggs or dairy to make french toast!
French toast was one of my staple weekend breakfast recipes in college. It’s such an easy dish to veganize; you just need some non dairy milk, ground flax or chia, and some cinnamon, vanilla and maple syrup to make the batter.
Today, I’m using a vegan brioche bread to make this easy vegan french toast. I recommend using a sturdy bread or one with thicker slices so it doesnt fall apart in the batter.
I really have yet to come across a recipe that can’t be made vegan and this easy vegan french toast is no exception! You don’t need eggs or dairy to make a delicious, buttery, comfy french toast.
French toast is a great budget meal option; bread, milk, syrup, and a few basic baking ingredients are items many people have on hand all the time. It’s actually recommended to use bread that’s slightly stale, so it’s a great dish to make to ensure bread doesn’t go to waste.
This easy vegan french toast can be made in less than 15 minutes! So simple, quick, easy, and delicious.
What you need to make this easy vegan french toast:
Bread: I used vegan brioche bread, but many types of bread will work great for french toast. I recommend using a thickly sliced bread, or one that is sturdy enough to not get too soggy from the batter.
Non Dairy Milk: I used unsweetened almond milk. You can use any type of plant milk for this recipe. If you use a sweetened milk you may need to reduce the amount of maple syrup used.
Flax or Chia Seeds: I find that ground flax or chia seeds work best to help thicken the batter.
Cinnamon: I add ½ tsp.
Vanilla: I use pure vanilla extract.
Maple Syrup: Many french toast recipes call for sugar in the batter, but I thought it would be simpler to use maple syrup since I would already be using that as a topping.
Vegan Butter: This is optional, but I like to fry the french toast in butter to help avoid sticking to the pan.
Optional Toppings: Vegan butter, maple syrup, vegan whipped cream, or fresh fruit.
How to make easy vegan french toast:
Start by adding all of the batter ingredients to a bowl. You’ll want a bowl that’s wide enough for the slices of bread to be dipped in. Add in the non dairy milk, ground flax or chia, cinnamon, vanilla, and syrup. Give it a stir to combine.
Add 1 tbsp of butter to a frying pan and turn to medium heat. You can skip the butter if you like, but it will help prevent the toast from sticking to the pan and will add a richness to the flavor.
One slice at a time, dip the bread into the batter, coating each side. Add the slices to the pan and fry each side for about 4 minutes, until golden brown. Serve with vegan butter, maple syrup, vegan whipped cream, or fresh fruit. Enjoy!
