Easy Vegan Green Bean Casserole
This easy vegan green bean casserole uses coconut milk, chopped mushrooms, white wine, frozen green beans, and a few simple seasonings to form the perfect, savory dish!

- 1 tbsp vegan butter
- 1 medium onion
- 1 cup chopped mushrooms
- 1 tbsp flour
- 1/4 cup sherry or dry white wine
- 1 13.5 oz can coconut milk
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp nutritional yeast
- 2 tsp soy sauce
- 1 lb frozen green beans
- 2 cups crispy fried onions
Preheat the oven to 350°F.
Dice the onion and chop the mushroom.
To make the cream of mushroom: Add 1 tbsp of vegan butter to a large pan on medium heat. Add the onion and mushroom and cook for 5 minutes, stirring occasionally.
Add in the flour, salt, and pepper and cook for 1 minute while stirring continuously.
Add the wine and soy sauce and cook for 3 minutes while stirring.
Add in the coconut milk and nutritional yeast and simmer for 8 minutes, stirring occasionally.
While the cream of mushroom is simmering, microwave the green beans in a microwave safe container for 2-5 minutes, until fully thawed.
Add the green beans to the cream of mushroom and cook for 2 minutes.
Remove from heat and fold in 1 cup of crispy fried onions. Add the mixture to a casserole dish and bake for 25 minutes.
Remove the dish from the oven and spread 1 cup of crispy fried onions on top. Bake for an additional 5 minutes.
