This easy vegan green bean casserole is just as satisfying and decadent as traditional green bean casserole, and 100% plant-based and cruelty-free! I was actually a little surprised when I first tasted this recipe the first time I made it. I wasn’t expecting it to taste THAT delicious and creamy.

Ingredients for Easy Vegan Green Bean Casserole:
- Vegan butter: Any brand will work; I used Earth Balance.
- Onion: White or yellow onion will work best.
- Mushrooms: I used button mushrooms.
- Flour: I used all-purpose flour.
- Coconut milk: canned coconut milk works best.
- Sherry or dry white wine: I used Sauvignon Blanc.
- Salt/Pepper: As little as much as you like; taste and adjust!
- Nutritional yeast: This adds a richness and complexity to the flavor of the cream of mushroom soup.
- Soy sauce: I use 2 teaspoons in this dish.
- Green beans: For this recipe, I used frozen cut green beans
How to Make Easy Vegan Green Bean Casserole:
First, preheat the oven to 350 degrees Fahrenheit. Next, chop up the mushrooms and dice the onion.
To make the vegan cream of mushroom soup, add 1 tablespoon of butter to a pan on medium heat. Add in the mushrooms and onion and cook for about five minutes.
Next, add the flour, salt, and pepper and cook for 1 minute while stirring.
Add the wine and soy sauce and cook for 3 minutes while stirring. Then, add in the coconut milk and nutritional yeast. Simmer for about 8 minutes, stirring occasionally.
While the cream of mushroom simmers, microwave the green beans in a microwave-safe container to thaw. Then, add the green beans too the cream of mushroom and cook for another 2 minutes. Remove the mixture from the heat and fold in the crispy fried onions.
Add everything to a casserole dish and cook for 25 minutes. Remove the dish from the oven and top with an additional cup of crispy fried onions and cook for 5 more minutes. Serve hot and enjoy!
Easy Vegan Green Bean Casserole
Ingredients
- 1 tbsp vegan butter
- 1 medium onion
- 1 cup chopped mushrooms
- 1 tbsp flour
- 1/4 cup sherry or dry white wine
- 1 13.5 oz can coconut milk
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp nutritional yeast
- 2 tsp soy sauce
- 1 lb frozen green beans
- 2 cups crispy fried onions
Instructions
- Preheat the oven to 350°F.
- Dice the onion and chop the mushroom.
- To make the cream of mushroom: Add 1 tbsp of vegan butter to a large pan on medium heat. Add the onion and mushroom and cook for 5 minutes, stirring occasionally.
- Add in the flour, salt, and pepper and cook for 1 minute while stirring continuously.
- Add the wine and soy sauce and cook for 3 minutes while stirring.
- Add in the coconut milk and nutritional yeast and simmer for 8 minutes, stirring occasionally.
- While the cream of mushroom is simmering, microwave the green beans in a microwave safe container for 2-5 minutes, until fully thawed.
- Add the green beans to the cream of mushroom and cook for 2 minutes.
- Remove from heat and fold in 1 cup of crispy fried onions. Add the mixture to a casserole dish and bake for 25 minutes.
- Remove the dish from the oven and spread 1 cup of crispy fried onions on top. Bake for an additional 5 minutes.
